The island of Isola delle Rose is a splendid oasis just off Venice, Italy. And it’s about to get culinary inspiration from a very deserving city: Washington, D.C. Marriott Internatonal announced that the JW Marriott Venice Resort & Spa will partner with Fabio Trabocchi, a premier chef and restaurateur, to rebrand its restaurant concept to Fiola at Dopolavoro Venezia. Harking back to 1920’s design and architecture, the partnership with Trabocchi, the head and partner of Fabio Trabocchi Restaurants, will revitalize the space, drawing inspiration from Fiola D.C., and culinary highlights from the near-unparalleled artisanship displayed at this Trabocchi flagship restaurant.
In the announcement, Marriott said the restaurant, which will open April 2019, will source from “centuries-old Rialto Market, the Adriatic Sea, as well as vegetables and exclusive olive oil from the private island’s own vegetable garden and olive grove.” Fiola Lobster Ravioli, Bassano White Asparagus and Caviar, Foie Gras alla Veneziana, Moeche col pien (soft-shell crabs from the Venetian lagoon), Venetian Style Tuna Crudo (a daily-changing crudo option, finished tableside), and Vanilla Fried Pastry Cream and Corbezzolo Honey are some of the treasures that await Fiola Dopolavoro’s guests. The menu will change daily.
“We look forward to another exciting chapter for Fiola and are eager to offer the discerning guests at JW Marriott Venice Resort & Spa signature dishes that incorporate local Venetian flare,” said Trabocchi. “Our menu was inspired by the city’s romantic atmosphere and we are thrilled to open the doors to our newest location.”
The 2019 Venice Food & Wine Festival at JW Marriott Venice Resort & Spa is approaching and Trabocchi will make a return after a 2018 attendance. Together with his wife and business partner, Maria Font, Trabocchi has built an impressive restaurant empire in D.C., which is primed for continued growth. The Fabio Trabocchi Restaurants portfolio includes Fiola D.C., Fiola Miami, Fiola Mare, Sfoglina Pasta House, and Del Mar.
Isola delle Rose is a serene retreat and the island appears to be an ideal place for Trabocchi’s return to Italy. JW Marriott operates 80 properties across 30 countries. Featuring 266 rooms and suites, and four restaurants, the JW Marriott Venice Resort & Spa was designed by architect Matteo Thun.
